Barbecue traditionally involves long cook times over low heat. You take a cut of pork, ribs, or brisket, you put it in a smoker or a barbecue, and you leave it over smoldering coals for several hours. If the wait doesn't make you hungry, the smell will. While the final product is always worth it, I always hate the part where I have to sit idly by for several hours while delicious barbecue aromas waft their way to my nostrils.
With this recipe, however, you get to skip all of that. Barbecue purists will tell you that you're not eating "real" barbecue. That doesn't make these pork chops any less delicious. With less than an hour of cooking and just 5 minutes of prep time, you'll be able to put delicious BBQ pork on your table in record time. Plus, the recipe is super easy!
Incredibly Simple Sweet Baby Ray's Oven Baked BBQ Pork Chops
Ingredients:
6 pork chops (both bone-in and boneless are fine)
1 bottle Sweet Baby Ray's BBQ Sauce (feel free to use your favorite variant)
1 tsp salt
1/2 tsp pepper
1/2 yellow onion, sliced
Cooking Instructions
- Preheat your oven to 375 Fahrenheit.
- Generously sprinkle the pork chops with salt and pepper on both sides. If possible, do this a few hours before and throw your pork chops back in the fridge.
- Coat the bottom of a casserole dish with barbecue sauce.
- Arrange pork chops on top of the sauce in a single layer
- Cover the pork chops with more barbecue sauce and sprinkle on the onion slices and any other aromatics you'd like to add
- Bake for 30 minutes or until the pork chops have reached an internal temperature of 145 Fahrenheit.
Room For Improvisation
This recipe is incredibly basic. While I love preparing it as written, you don't have to do things exactly to the letter! Try mixing in parsley or other spices with your onions, using a slightly fancier dry rub, or even making your own barbecue sauce. You can even marinate your pork chops before you cook them to imbue them with your favorite flavors. This will make them extra juicy when it comes time to eat.
The easiest way to start experimenting is to try using different kinds of barbecue sauce. Your local grocery store will have all kinds of flavors for you to explore. Once you've pinned down your favorite kind, I recommend learning how to make it at home! This way, you'll come out with the exact flavor you like every time.
Here's a basic recipe you can use and modify in order to make your own barbecue sauce at home :
Barbecue Sauce Recipe
1 cup ketchup
2 tbsp white wine vinegar
2 tbsp brown sugar
2 tbsp honey
1 tsp mustard
1 tsp Worcestershire sauce
1 tsp cayenne pepper
pinch salt
To prepare: stir ingredients together in a saucepan until sauce is evenly mixed. If you'd like to thicken your sauce or give it a slightly more complex flavor, simmer it over low heat for up to an hour. Everything's fully cooked, however, so feel free to pull it off the stove whenever you'd like.
Modifying Your Sauce
Your barbecue sauce can have anything you want in it. Try using apple cider vinegar instead of white wine vinegar, or skip both and use wine instead. While we're on the subject of drinks, some people love barbecue sauce that's got a splash of beer or cola in it.

You can make your sauce spicer by adding ingredients like cumin or pepper flakes or even skip the cayenne altogether for a more mild experience.
Finally, varying the kind of mustard you use can have some pretty neat results. I'm lazy, so I'll use a teaspoon of whatever condiment is in my fridge, but you'll get different tastes from using Grey Poupon, deli mustard, or the yellow stuff. You could even use the ground spice instead of a pre-made product.
